Greek Walnut Cookies


Basically just made these so I could bribe my english class with them. No shame at all. 

Ingredients:
3/4 cup toasted walnuts (1/2 cup chopped 1/4 finely ground with blender)
1 1/2 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter (one stick)
1/2 cup confectioners sugar
1 egg yolk
2 teaspoon vanilla extract
Directions:
1. Heat oven to 350°F. 
2. Whisk together flour, baking powder, salt, and walnuts in a bowl. 
3. In an electric mixer, beat together egg yolk, sugar, vanilla extract, and butter. Mix on medium with paddle attatchment until light colored. 
4. Mix the flour mixture into the wet ingredients until completely combined. The dough should be slightly crumbly and chunky. 
5. On a parchment lined baking tray, place tablespoon sized balls of dough. 
6. Bake for about 18 minutes or until golden brown. Garnish with powdered sugar.
